Soon after, he returned to Mexico, armed with a Master’s degree in Food Engineering from Tecnológico de Monterrey, but opportunities were scarce. Still, his determination paid off, and with IFF Mexico, his true journey began, a journey that would eventually take him across the world.
Juan Jose started modestly as a junior flavorist, absorbing everything he could about the science and art of flavor creation. His talent and drive soon earned him invitations to train abroad. First, he travelled to New York City, where he deepened his understanding of IFF’s approach to global flavor innovation. Later, he continued his training in Paris, France, and spent over five years in the Netherlands, learning from some of the most experienced flavorists in the industry.
This global exposure gave him more than technical knowledge; it broadened his palate, taught him to think across cultures, and nurtured a relentless curiosity. “I’ve never stopped working, day and night,” Juan Jose recalls. “Flavors became my life, and that’s why I continue, all the way to the end.”
While Juan Jose’s career has taken him around the world, his heart has always been rooted in Mexico. His inspiration today lies in capturing and preserving the flavors that tell the story of his country. “What did the Aztecs and Mayans eat at the beginning of the Spanish conquest?” he asks. “These ancestral flavors are part of our identity, and they must be remembered.”
His vision is not simply to replicate these ancient tastes, but to document and reintroduce them in ways that connect the past with the present. By studying historical diets and experimenting with native ingredients, Juan Jose seeks to give Mexico’s culinary history a global stage.

He admits that his personal life has often taken a backseat to his work. “I live alone, my family is divided,” he shares. Vacations are rare, and time for rest almost non-existent, as his passion for studying aromas and developing new flavors keeps him constantly engaged.
