Over the past decade, Veronica Serrano has been at the forefront of advancing the role of nutrition in healthcare, driving improvements in patient outcomes through innovative strategies and evidence-based approaches. As a registered dietitian and healthcare executive, she currently serves as the Assistant Director of Food and Nutrition at Memorial Healthcare System in Broward County, Florida.
In her role, Veronica focuses on expanding and enhancing nutrition services, particularly by identifying and addressing gaps in service delivery through strategic initiatives. At Memorial Hospital Pembroke, she recently conceptualized, developed, and launched a new department dedicated to expanding outpatient medical nutrition therapy.
“The inspiration behind these ventures stems from my commitment to improving patient care and operational efficiency,” Veronica explains. “Whether it’s enhancing service lines, implementing cost-saving strategies, or ensuring continuity of care, my work is driven by the desire to make a tangible impact in healthcare.” She adds that receiving the Business Elite 40 Under 40 Award was a reflection of her time and effort, underscoring the importance of her contributions to enhancing patient care.
Veronica’s career began as a registered dietitian. With the support of a mentor and her own dedication, she rapidly advanced into a leadership role. Her academic background has been pivotal to her growth, including a Bachelor of Science in Dietetics and Nutrition from Florida International University, a Master of Science in Human Nutrition, and a Doctorate in Healthcare Administration from the Medical University of South Carolina.
In 2016, Veronica joined the Association of Nutrition & Foodservice Professionals (ANFP) as a Program Accreditation Reviewer while simultaneously beginning her tenure at Memorial Healthcare System as a Dietetic Intern. Soon after graduation she was hired by the healthcare system, where she quickly advanced from Clinical Dietitian to Operations Coordinator, eventually becoming Assistant Director of Food and Nutrition within just a few years.
As a leader, Veronica balances patient-centered care with operational efficiency. Leading a multidisciplinary team in a complex healthcare environment has underscored the importance of communication, collaboration, and continuous professional development in achieving optimal patient outcomes.
“My passion lies in witnessing tangible improvements in patients’ lives through enhanced nutritional care,” Veronica says. “Success stories—such as patients regaining strength and improving health—fuel my dedication. This personal connection to patient wellness drives continuous learning and innovation.” She adds that leading the development of the medical nutrition therapy department further solidified her commitment to integrating nutritional strategies into patient care.
Veronica’s contributions to healthcare leadership, especially in nutrition, have been notable. She is also a Fellow of the American College of Health Data Management and serves as a Board Director and Chair of Business Partnerships for the South Florida Chapter of the National Association of Latino Healthcare Executives.
Reflecting on her career, Veronica emphasizes the influence of her family: “My mother has been a constant source of support and inspiration throughout my career. I’m proud to serve as a role model for my sister, who proudly shares similar career goals.” Veronica aims to mentor emerging leaders and spearhead initiatives that integrate nutrition into all aspects of patient care—a mission inspired by the foundational support she received from her family.
Outside of work, Veronica enjoys spending time with her family, especially her newborn niece. She also loves going to the theater, attending concerts, and exploring new cuisines. Currently, she is rebranding her food blog on Instagram, @iDreamofSpice, where she shares content focused on culinary exploration. In her free time, she enjoys reading on her balcony, watching sunsets, and relaxing at home.
Veronica’s leadership philosophy is rooted in transparency and honesty. She believes in leading by example and creating a supportive environment where all voices are heard and respected. Looking ahead, Veronica aspires to transition into a healthcare administrator role, where she can further expand her impact on patient care and organizational leadership.
